Classic Anzac Cookies

Ingredients

1 cup (125g) all-purpose flour
1 cup (90g) rolled oats
1 cup (85g) desiccated coconut
1/2 cup (100g) granulated sugar
1/2 cup (100g) brown sugar
1/2 cup (115g) unsalted butter
2 tablespoons golden syrup (or substitute with maple syrup)
1/2 teaspoon baking soda
2 tablespoons boiling water

Instructions

  1. Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the flour, rolled oats, coconut, granulated sugar, and brown sugar. Mix well to combine.
  3. In a small saucepan, melt the butter and golden syrup over low heat. Stir until the mixture is well combined and smooth.
  4. In a separate small bowl, dissolve the baking soda in the boiling water. Add the baking soda mixture to the melted butter and syrup mixture. It will foam up slightly.
  5. Pour the liquid mixture into the dry ingredients. Mix well until all the ingredients are combined and you have a sticky dough.
  6. Take spoonfuls of the dough and roll them into balls. Place the balls onto the prepared baking sheets, leaving some space between each cookie as they will spread during baking.
  7. Flatten each ball slightly with the back of a spoon or your fingers to create a round disc shape.
  8. Bake the cookies in the preheated oven for approximately 12-15 minutes or until golden brown around the edges.
  9. Remove the baking sheets from the oven and allow the cookies to cool on the sheets for a few minutes. Then transfer them to a wire rack to cool completely.
  10. Once the Anzac cookies have cooled, they are ready to be enjoyed! Store them in an airtight container for up to a week.

Note: Anzac cookies have a lovely chewy texture. If you prefer a crunchier cookie, you can increase the baking time by a few minutes.
